Pretty Salad and Carbs
After my salad, I was craving carbs! I had 1 cup of Kashi Heart2Heart, a Kashi Pumpkin Spice granola bar, and 1/2 peanut butter LaraBar.
The base of my salad is spinach and red/yellow bell peppers. The four corners consist of approx. 1/4 cup scoops of: black bean salad, sesame broccoli, BBQ tempeh, and feta-blueberry quinoa salad. In the middle I added some celery and blue cheese crumbles.
